Well, I saw this recipe for eggplant 'bacon' and this lady made a pretty damn good looking 'B'LT with avocado and grain mustard. Making one for myself has been on my mind ever since but I don't have the time/energy/****stogive to smoke, dehydrate, and deep fry some ****in eggplant slivers for one sandwich to eat for myself.

Well, it's not bacon but from looking at the recipe it looks like it would have a similar array of flavors. It's just eggplanty instead of porky. It's smoked with mesquite(I think? can't remember), soaked in veggie stock brine, dehydrated, and deep fried. So you get that mixture of chewy/crunchy texture, smokey flavor, saltiness, and greasiness. I think you need to open your mind to vegetables dude, they're not that bad.
