I must say that there is an art to the perfect scrambled egg. Anyone can pan fry a corn tortilla in some oil or butter. But scrambled eggs? Seriously that **** is some ****ing magic. And there's so many ways to go about it depending on what you're using them for. I'm fond of the double-boiler method. But for tacos? I practically make them like you would an omelette but folded into a more taco-friendly, paddy-like shape. Alas, I've yet to try eggs sous vide. One day...

Just the whole idea of a scrambled egg taco… mmm. Maybe throw some onions and mushrooms in. And I know you don't eat meat, but I'd probably add bacon too.

Oh yeah man. Load that shizz up with some veggies.

With the meat though... If you have too I'd recommend Chorizo. Get some pepperjack on there, some salsa, avocado. You're ballin' like McGnarllin', darlin'.

Well, it's time consuming but if you're willing to invest...

Spicy Breakfast Tacos with Avocado Aioli*

Aoili:
One roasted jalapeneo, skin peeled.
One clove of garlic
Pinch or so of cilantro
Juice of a lime
One avocado
Avocado oil (any oil will suffice but this one always seemed... suiting)

Everything but the oil goes into a blender. Pulse it around a few times and then slow drizzle in the oil while pulsing until you've got a smooth and evenly colored puree. Set aside.
*Calling it an Aioli is a bit of a stretch but people like fancy terminology... It'll impress your girlfriend .

Salsa & Chorizo:
LIGHTLY (that chorizo is some greasy stuff man) oiled pan over medium: Equal parts corn, red bell pepper, red onion, and diced tomatoes. Sauteed for about 3-4 minutes and then throw in your chorizo (taken out of it's casing of course) and cook it all till it's done. "Done" is kind of subjective but basically you just want a dry pan if you look under everything you've cooked- no liquids and everything is a pleasing goldish-brown color. Set it all aside in a bowl. I'd pretty much just take a paper towel, wipe of a bit of the residue leftover from cooking everything, and then add a little butter to the leftover fat from the sausage for the eggs.


Eggs:
I can't think of how to describe making a scrambled egg patty right now. But basically you should be able to finish 2-3 regular scrambled eggs within 1 minute and a half. I You're gonna whisk um in a bowl or whatever first, add a little melted butter while whisking, and then whisk them in a pan (medium high) constantly. Don't stop whisking until they're nice and fluffy, pretty much sticking to the whisk but not obviously still wet. If things are happening too fast you can always take the pan off the heat, it's still hot and will continue to cook the eggs. Just don't stop whisking them! Always season eggs after they're cooked. Idk if it's just one of those weird chef-superstions or what but supposedly seasoning beforehand causes them to be excessively runny and slows down cooking time. I've been yelled at enough times over this to just go along with it.

From there it's up to you man. I love those corn tortillas fried in a little oil till they're just a little crispy but whatever you like will work. Just plate um up, dress um as you see fit, and enjoy!
