I had to look it up too, but there's something very similar up north here: chips, cheese & gravy and I can confirm it is absolutely superb.

Are cheese curds comparable to cheddar? If so, poutine is bog standard in my household.

I think it's more like cottage cheese, I'm a bit unsure of it if it is. Would prefer cheddar.

I guess I shouldn't knock it until I try it. I didn't think fries and mayo together would go over well, but I actually prefer it over Ketchup (Catsup) most times. Poutine just looks/sounds nasty. Cheese AND gravy... kinda makes me wanna wretch.

Gravy and chips is exceptional, though curry sauce is obviously superior. Cheese is also nice, so why wouldn't it work?
