On the rare occasions when I don't know someone's gender, I refer to the person by name. If I don't know that, I phrase my sentences so that no pronouns are necessary. As somewhat of a linguistic aesthete, I think it sounds better than using "they" or the contrived "ze/zer."

Seriously: you can really upset someone by calling them he if they identify as a female, or vice versa, so using they or them is the best way to do it. Not to mention those names that could be either until you meet the person (and sometimes not even then) - Vivian, Cameron, Francis etc. We're not talking about written forms by the way...
