One of my favorite Dylan covers is Jeff tweedys cover of "simple twist of fate".

I would Recommend going to YouTube and searching "sixteen horsepower nobody Cept you". Can't think of the guys name but that was his bands name. It's a solo banjo performance of a great Dylan song. I'm really not very fond of the Dylan original, but I think this guy puts a lot of heart into it and does a great job.
