I'd recommend Ólafur Arnalds to you.
Perhaps you may listen to "And They Have Escaped The Weight Of Darkness"-Album. I'm not sure how the music above sounds, I can't listen to music currently, but people describe his music as neo-classical, experimental and electronica. Further recommendations would be Ludovico Einaudi, who's music is mainly piano-heavy and Yann Tiersen, who tried to involve electronic elements and layers in his newest album "Skyline". I decided to check this out and ended up listening to the entire album. Very simple and beautiful. It reminds me of parts of Sigur Ros and Godspeed You Black Emperor/ A Silver Mt. Zion. More ambient and less instrumental but still perfect for certain occasions.
