I have some of the Brandenburg Concertos if you want... out of the six I only have #1, 2, 3, and 6.

Yes, Bach used a lot of symbolism in his music. He also used a motif that spelled out his name, in his music - in American notation, the notes are Bb A C B. It's not just you, Glenn Gould was a very quirky performer. What you're hearing is one of his characteristic tics of vocalizing while he plays.
