I'm going to have to go with Dmitri Shostakovich, but that could change by the next piece of music I hear from a different composer.

Stravinsky and Tchaikovsky would be my answers to this I guess. I'm far from a classical expert, so I'm sure I'm missing a lot of good ones, but I enjoy what I've heard of both those guys.

My favorite is Beethoven. The first song I learned on piano was his "Moonlight Sonata"
