Here's one from me... "Mundian To Bach Ke" by Panjabi MC

I'm sure most of you have heard this one a million times, but it's still an incredibly catchy dance track. And combining Indian folky music with the theme from Knight Rider is such a weird juxtaposition it really blows my mind that it works so well.
