The meaning of simple here should be replaced with which version requires the fewer new assumptions to be made about our universe, not which one is simpler to explain. Using Occam's razor as a sweeping argument against the hypothesis that God created the universe may not be as easy as one might think, but I too am in favour of it as a way to mentally challenge or test truths.
