Well. It's because you have so many stylish filmmakers now who are obviously influenced by Burton (such as Del Toro) and so it's harder and harder to compete with these people. Film isn't a competition though. I don't think Burton has lost his edge, his films just don't have the same wow factor his old ones had. But that has more to do with how unique he was back then compared to how much he stands out today, which is not as much. It has nothing to do with a decline in quality. In fact Big Fish and Sweeny Todd is among his very best work IMO.

Besides, moviegoers are stupid in that any filmmaker with a distinctive style is considered a one trick pony. And so Burton has tried to tone down a bit I think, Big Fish and Charlie for example did away with the black and white goth stuff for a more colorful visual style, I admit it's not as distinctively Burton, but hey, he wants to do something different, I can't blame him. People consider the whole goth thing to be rather cliche now so I can undestand why he wants to disassociate himself with that a bit.

Also, I don't think it's bad that he's doing adaptations now, Sweeny Todd was a rather obvious choice for Burton to direct, so is Alice in Wonderland.
