i'm not a keyboard expert by any means so take my advice with a packet of salt.

you can get cable adapters to go from MIDI to USB for relatively cheap so that might open up more possibilities, especially for using a mac.

you'll probably have a harder time finding something that doesn't have MIDI than something that includes it. same with headphone jacks.

musiciansfriend.com has a wide variety starting at around $400 for this casio

Buy Casio CDP-100 88-Note Weighted Hammer Action Digital Piano | Home Digital Pianos | Musician's Friend

there's this korg for just under a grand

Buy Korg SP-250 88-Key Portable Digital Piano | Stage Digital Pianos | Musician's Friend

or this kurzweil at around $1500

Buy Kurzweil SP2XS 88-Key Stage Piano With Speakers and Stand | Stage Digital Pianos | Musician's Friend

if you have the cash i'd go for the kurzweil, a friend of mine had one back in the college and it was a seriously ROBUST piece of gear. if you need more features than what it offers then you're basically in the market for what's sold as 'workstations' and generally start at about $2000 a pop.
