Get Freak Out and Hot Rats, those are the perfect albums for people just getting into Zappa. Other goodies are The Grand Wazoo, Apostrophe ('), Weasels Ripped My Flesh and Over-Nite Sensation.
Though theres so much good Zappa stuff, and a lot of its so different, its a big box of chocolates, you just have to try different albums to see what you like.
