Based on the OP's post it seems like they somehow think Viking Metal bands are just any Metal bands from Scandinavia. The thread title confused me because those two sub-genres (Melodeath, and Viking Metal) aren't very common together, and the only band listed by the OP which could almost kinda be considered such is Ensiferum who on their first album was more just Folk Metal and later went on to be Folk Metal with more Power Metal influence. But I guess they have hints of Black Metal influence, especially on their early demos, so I could see some of their stuff reasonably being considered Viking Metal by some.

I agree with an above stated comment, that of which states Viking Metal as an off-shoot of Folk and Black Metal. I personally categorize Viking Metal under the Pagan Metal umbrella alongside Anglo-Saxon Metal and all the other cultures' unique Folk influenced Black Metal.

Also, probably my favourite Viking Metal band would have to be Manegarm, though they've also done some stuff with much less Black Metal influence. For Melodic Death Metal some of my favourites include Wintersun, Kalmah, and Dissection's third album which broke away from their Melodic Black Metal roots, and got into Melodeath called "Reinkaos."
