Hm, I'm like this with Zappa, but I love and highly respect Beefheart. I think with me it's the fact that there are some amazing blues tunes underneath the quirky lyrics, and image. I love his woflman-like growls, and his dada-esque feel. I find him funny, and extremely listenable. Try "Safe as Milk", it's a wonderful place to start if you're unfamiliar with Beefheart. I really can't explain the "Avant Garde" part, but someone else might be able to.
