I'm unclear on how the notion of "some fans don't like experimenting with tried and true formula" differentiates the genres you've defined as elitist (metal, jazz and punk) from the genres you've defined as non-elitist (blues, rock and country). When I think of blues and country in particular, fans who like "new and more adventurous elements introduced into the formula" are definitely not the first thing that comes to mind.
